Brutus (The Red Macaw) and Longfellow (The Cockatoo) have crafted Big Pecker Wines for warm tropical locations, sunny beaches and island paradises. Brutus likes his Chardonnay fruit forward and smooth with a long finish, while Longfellow likes a Cabernet Sauvignon he can enjoy with his friends at the bonfire.
Brutus and Longfellow left their home, Parrotdise Waterfront Bar and Grille, in the Florida Keys, during the spring of 2005 in search of the right wines to create their ideal Chardonnay and Cabernet Sauvignon. After flying around the world to taste, Brutus and Longfellow found their perfect wines could be crafted from the wine found in California.
For more than a year Brutus and Longfellow worked their beaks off. After many more months of tasting they finally decided on their final blends in November 2006. Brutus added just a touch of Pinot Gris, Sauvignon Blanc, and Late Harvest Viognier into the Chardonnay. This addition assured a wine full of tropical fruit aromas that keeps on flying. Longfellow blended together a Cabernet Sauvignon with a few drops of Petit Verdot, Petite Sirah, and Merlot. The result of Longfellow's blend is a wine with rich red cherry and warm cinnamon aromas. Perfect for that bonfire on the beach. Both Brutus and Longfellow have pulled the corks for you and instead have sealed their Big Peckers Wines with a screw cap to insure you taste the wine and not the cork!
